Shakshuka Recipe: The exotic Turkish dropped egg curry with an Indian twist





The dish has existed in Mediterranean cultures for centuries especially in Turkey. The dish is said to have Tunisian or Yemen origin. And here, I am preparing it with the twist and tint of Indian spices.

Shakshouka (spelled shakshuka or chakchouka), is a dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onion and garlic, and commonly spiced with cumin, paprika, cayenne pepper and nutmeg.        Prep time :       10mins

       Cooking time:  20 mins

       Serving:            4-5

Ingredients:-

Eggs

    6 No

Tomato (crushed)

    2 cups

Capsicum

    1 cup

Onion

    1 cup

Garlic

     4-5

Salt

     To taste

Tumeric

     1 tsp

Chilli powders

     1 tsp

Cumin powders

     1 tsp

Home made Masala

     1/2 tsp

Coriander

     For garnishing

Instructions:-

1.     Heat oil in a large saute pan on medium heat, add the chopped onion     and cook for 2-3 mins then add chopped capsicum and cook until it gets softened.

2.     Now add the crushed garlic and the spices(Salt, turmeric, red chilli powder, garam masala and thyme) and cook for few minutes.

3.     Pour the crushed tomatoes and cook for about  5 mins until the tomatoes are cooked then add the sugar and 1 cup water and bring the sauce to a simmer.

4.     Use your large spoon to make small well in the sauce and add the cracked eggs into each well

5.     Cover and cook for 5-8 minutes or until the eggs are cooked to your liking.

6.     Garnish it with coriander leaves and serve  hot/cold with bread or any roti.
